Noted
If all you need is an app to take down quick notes, noted is the right choice.
Finally, a new version with a somewhat new UI is here to download (Version 2.0.0 ONLY works on Leopard).

!!!IMPORTANT!!! If you are still running on Tiger, download version 1.0.2 as newer version are not compatible with your version of Mac OS X. I also suggest you turn off updates checking in the preferences.
Usage
Noted should be very easy to use: simply create a note, edit it and save it.
Notes are saved everytime you switch between notes, so you don't have to think about it.
